Back to School Pencil Cookies

These back to school pencil cookies are the cutest first-day-of-school treat, and they're easier to make than they look. It's just a simple butter cookie dough, rolled out and cut into strips, then dressed up with melted candy wafers and chocolate until they look like the real thing. No piping bags, no stress, just a grater and a little patience. Great for lunchboxes, teacher gifts, bake sales, or that first day of school photo op.

Ingredients

COOKIE INGREDIENTS:

  • ½ cup unsalted butter, cubed
  • Pinch of salt
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ¼ cup water
  • 2 cups all-purpose flour

DECORATION INGREDIENTS:

  • Yellow, pink, and white candy wafers, melted
  • Dark chocolate, melted

Directions

  1. In a large bowl, beat the butter, salt, sugar, and vanilla until smooth with an electric mixer or a whisk. Add the water and beat again until combined. Add the flour and mix to form a ball.
  2. Roll out the dough on parchment paper and cut out the cookies into thin stripes to imitate the shape of a pencil.
  3. Transfer the cut out cookies on a Farberware Jumbo Cookie Sheet, making sure to leave space in between them, and bake at 350 degrees Fahrenheit for 8-10 minutes or until lightly golden. Let them cool.
  4. Using a grater, gently shape the tip of the cookies into pencils.
  5. Decorate with melted candy wafers and chocolate - spread yellow for the body, white for the ferrule, pink for the eraser, and chocolate for the tip. Leave them on the counter to harden before enjoying.
