One Pan Creamy Tomato Tortellini with Sausage

One pan, one dinner, zero regrets. Cheesy tortellini swimming in a creamy tomato sauce with savory sausage, all made in a single skillet — because dishes are the real enemy here. It's the kind of weeknight dinner that tastes like you tried way harder than you did. Ready in under 30 minutes, perfect for busy nights when everyone's hungry and nobody wants to cook (or clean).

Ingredients

  • 1 lb. sweet Italian sausage (chicken or pork), casings removed

  • 1 yellow onion, diced

  • 4 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1 teaspoon Italian seasoning

  • 3/4 teaspoon kosher salt

  • Optional: 1/4 teaspoon red pepper flakes

  • 1 14.5-oz. can crushed tomatoes

  • 2 cups low-sodium chicken broth

  • 20 oz. fresh (refrigerated) cheese tortellini*

  • 3 cups fresh baby spinach, roughly chopped

  • 1/2 cup heavy cream

  • 1/4 cup freshly grated Parmesan cheese, plus extra for serving

  • Thinly sliced basil leaves

Directions

  1. Heat a Farberware Bon Voyage 4.5-Quart Ceramic Nonstick Sauté Pan over medium heat. Add the sausage, breaking it apart with a wooden spoon into bite-sized crumbles. Cook for about 8 minutes until browned and cooked through.
  2. Add the diced onion to the skillet and cook for 3-4 minutes until softened. Stir in the minced garlic, tomato paste, Italian seasoning, salt, and red pepper flakes (if using). Sauté for about 1 minute until aromatic and the tomato paste darkens in color.
  3. Pour in the chicken broth and crushed tomatoes and bring to a boil. Add in the tortellini and stir to submerge the pasta in the broth. Cook for 8 minutes, stirring occasionally, or until the tortellini is tender and cooked through.
  4. Turn off the heat. Stir in the baby spinach until wilted. Stir in the heavy cream and grated Parmesan cheese. Let cool for 5 minutes.
  5. Serve in shallow bowls with fresh basil and extra Parmesan on top. Enjoy!
