Strawberry Crepe Roll

Light, delicate, and perfect for spring, this strawberry crepe roll layers soft pink crepes with fresh strawberries and fluffy whipped cream, then rolls them into a beautiful, sliceable dessert. Simple to make and easy to share, it’s a fresh, elegant treat for any occasion. Recipe by Ava Uppal. 

Ingredients

Crepe batter:

1 egg

½ cup milk

¼ cup all-purpose flour 

½ tsp vanilla bean extract 

Drops of pink food color

For topping:

Whipped cream 

Strawberries, sliced

Directions

1. Mix all crepe ingredients and pour a dollop of batter in a hot non-stick ceramic pan over medium heat. 

2. Tilt the pan around to spread batter evenly. 

3. Cook each side for 30 seconds to 1 minute.

4. Once cooled, slightly overlap each crêpe, spread whipped cream and fresh strawberries, then fold and roll the crêpes like a burrito.
