These fried round jelly doughnuts are one of many fried foods often served on Chanukah to commemorate the miracle of the Temple oil.

3/4 cup warm milk, 100°F-110°F
2 1/2 cups + 1 tablespoon unbleached all-purpose flour
1/3 cup + 1/2 cup sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
2 large eggs, at room temperature
3 tablespoons unsalted butter, softened
vegetable oil, for frying
1 cup seedless raspberry jam
