Orange Scented Mashed Sweet Potatoes

A hint of orange makes classic mashed sweet potatoes even more delicious. When grating the zest, be sure to only use the colorful outer layer of the skin, and none of the bitter white pith. 1 pound orange sweet potatoes (yams), peeled and cut into 3/4-inch pieces
2 tablespoons unsalted butter
3/4 tablespoons salt
2 teaspoons grated fresh orange zest
Directions
1. Combine the potatoes in a Farberware Neat Nest 10.5" Nonstick Skillet with enough water to cover. Bring to a boil over medium heat and cook until very tender, about 18-20 minutes. Drain the potatoes in a colander; transfer to a bowl and mash until smooth.
2. Melt the butter in the skillet over medium heat. Add the mashed sweet potatoes and salt; cook, stirring constantly until heated through, about 1 minute. Remove from the heat and stir in the orange zest.
