1 medium onion, diced
3 cloves garlic, finely chopped
1 large carrot, diced
1 red bell pepper, diced
2 stalks celery, cut in halves and diced
1/2 pound Italian sausage, removed from casing
1 teaspoon kosher salt
1 teaspoon red pepper flakes
1 tablespoon dried Italian seasoning
1 cup roughly chopped dried cranberries
1 cup chopped pecans
3 cups cubes bread stuffing
2 cups cooked wild rice
2 1/2 cups chicken stock
Chopped fresh parsley, for garnish
